Does anyone know if I can create a different page layout for logging calls and entering tasks? It looks like when you click 'Log a Call' under activity history it takes you to the same page as 'New Task' under Open Activities. Can I have seperate page layout for both the thing? I don't want some of the fields on log a call under the new task option. Is this possible?

I gues thats noe exactly what you are looking for but still..
You can make a custom controller and vf page and then just check retUrl param and set some flag by its value.
