Estimated ship dates/Alerts?

I know I can create my own custom field under an opportunity for something along the lines of "Estimated Ship Date" but I was wondering if there was a way to set up an alert/notification for the opp owner on that date, so we can notify our clients of any delays.

You should be able to do that using a Time Dependant Workflow Rule with an Email Alert.

Here's a simple one that I created to alter an Opportunity Owner when the Close Date Lapses.  It creates an E-mail Alert and assigns a Task to the Opportunity Owner.
 

Workflow Rule Detail

 

Rule Name: Opportunity Update Reminder

 

Object: OpportunityActive: [X]

 

Evaluation Criteria: When a record is created, or when a record is edited and did not previously meet the rule criteria

 

Description: Remind the opportunity owner and senior management when the close date is approaching. Also, create a follow-up task for the opportunity owner if the deal is still open when the close date passes.

 

Rule Criteria: Opportunity: Closed [equals] False
